Bio

At NCFIL, Candace Smith is testing the functionality of different plant-based proteins. Once she has analytical data, she can take these proteins to the test kitchen to put them in actual food products. Candace also assists in the pilot plant during extrusion trials and tests the functional properties of extruded products.
